Salt. This is essential, not only to great tasting food but to our very survival. We as humans need salt. It is an essential nutrient. It can enhance or balance flavor. It can bring out subtle nuances or it can marry flavors together. It can be used to draw moisture out and it can be used to preserve. However, we don’t often think about the salt we use. Salt is just salt, right? Well, yes and no.
There are some debates as to whether or not salt is harmful to the environment to harvest. There are several different ways to do it but the most common are to drill for it to access the salt deposits and pumping water in to dissolve the salt and then evaporating the water in large “pressure cooker” like drums. Another way is harvesting rock salt. This is actually harvesting the rocks themselves. This kind of salt is only used on roadways and things like that.
It wasn’t until I was watching Mind of a Chef do a feature on April Bloomfield that I discovered Jacobsen Salt Co. which is based in Oregon. Learning about how they make salt, the attention to detail, the obsession with quality, and experiencing the results for myself is why now this is my preferred cooking salt.
